Cornmeal Encrusted Chicken Thighs With Basil

This is a very hard crusty coating. If you like a less crunchy than use regular corn meal.

2 c. corn meal,
2 eggs,
7 garlic cloves,
1/2 c. basil paste/puree,
olive oil,
5-6 boneless chicken thighs. salt and pepper.
When done spoon some of the roasted garlic oil over the chicken. After the basil if you want to add sliced tomato and cheese, then cover for a few minutes.
