Shrimps Semi Crusted Macadamia And Almond

When I eat shrimps I like to taste the item not the breading or batter which usually is heavy.

16 ea. 21-25 ct. shell on shrimp,
1/2 c. slivered almonds,
1/2 c. macadamia nuts,
1/2 c. pecorino romano cheese.
Those 3 items take the place of breadcrumbs.
The fresh thyme,
1 c. water,
1 c. dry white wine
1 fresh bay leaf are simmered with the shrimp skins ( after strained reduce to 1/3 c )
1/2 c. flour,
1 egg.
The rest of the recipe is the vegetable for the center of the plate.
9 button mushroom,
1 red pepper,
1 yellow pepper,
2 stalk celery ( peeled ) ,
1 zucchini,
